Crystal Hot Sauce was founded in 1923 by Alvin Baumer, who arrived in New Orleans after the Civil War. Alvin discovered a hot sauce recipe labeled Crystal Pure, which soon proved to be a winning formula. Renaming the company Baumer Foods, Inc., he expanded operations, eventually moving to a larger facility on Tulane Avenue in Mid-City.
Crystal is a third-generation, family-owned-and-operated business. Today, Alvin Jr. works alongside his son, Alvin “Pepper” Baumer III.
