Perfectly ripe tomatoes seem to be bursting out of every farmstand and garden patch.
But mixed in with those ripe specimens — and soon to take over the markets and patches — are their less-ripe relatives, green tomatoes. Rather than thinking of them as tomatoes that haven’t realized their full potential, we embrace the tart ones.

Green Tomato Frittata. Fried green tomatoes in brunch-ready form.
Cajun-Spiced Swordfish with Green Tomato Salsa. The salsa also complements chicken, pork chops, salmon or tortilla chips.
Marinated Butter Bean-Shrimp Salad with a Hot Bacon and Green Tomato Vinaigrette. Put this vinaigrette in heavy rotation for your end-of-summer salads.
Green Tomato Chutney. The sweet and tangy mix is good with meat or slathered on grilled cheese sandwiches.
Fried Green Tomatoes with Avocado and Sour Cream. A classic use of green tomatoes, this pairs the slices with a rich and creamy sauce.
