Offsetting the High Food Cost Menu Items

Most restaurants today feel it is necessary to menu the traditional cuts of beef, pork, lamb and veal. Because this is the norm I thought it would be beneficial to talk about a couple of food cost friendly, high quality items.

The first item that we are having a lot of success with is our fresh pork shank. This item is very tender and delicious, while offering a wonderful and eye opening plate presentation.
