Saval Foodservice is a very proud Culinary Competition Sponsor for the Maryland Prostart Student Invitational.  For the past nine years, our own Chef Bryan Bernstein has been one of the judges at the annual event.

On March 7, 2013 at the Baltimore Convention Center the 9th Annual Maryland ProStart Invitational was held.  MPSI is comprised of two events for high school students participating in the ProStart program.  The Culinary Competition and Management Competition.  This year, the students from around the state will compete for over $1 million dollars in scholarships and state-wide recognition!

2013 Participants:
Culinary Competition:

Carver Vocational Tech. High School, Edmondson-Westside, & National Academy Foundation High School (Baltimore City)

Kent County High Schooil (Kent County)
Bowie High School, Duval High School, Fairmont Heights High School & High Point High School (Prince Georges)

The culinary competition gives each team one hour to create an appetizer, entree and dessert.  Teams may have up to four students each with one alternate.  Teams are scored on proper food safety and sanitation procedures, proper cooking methods, food taste, teamwork and menu difficulty.  Teams must also price their menu to a 33% food cost and demonstrate their knowledge of menu development and pricing in the packet they submit to the judges.

Management Competition:
Vocational Technical National Academy Foundation (Baltimore City)
Carver Center for the Arts & Technology (Baltimore County)
Howard High School (Howard County)
Duval High School & Fairmont Highest High School (Prince Georges County)

Participating teams demonstrate their knowledge of the restaurant and foodservice industry by developing a business proposal for a new restaurant concept.  Teams prepare a comprehensive written proposal, verbal presentation and visual display that describes in detail their concept.  Teams are also tested on their critical thinking skills by reacting to potential management challenges related to their concept.
