Champagne Lobster Salad

Champagne Lobster Salad Recipe

Ingredients
  • Lobster Sensations
  • Brioche Sliders
  • Lettuce & Tomato
  • Vidalia Onions, minced
  • Butter,
  • Heavy Duty Mayonnaise
  • Champagne, Med Dry
  • Bay Leaf & Ground Pepper
Directions
  • 1.) For the Champagne Aioli: Melt butter in saucepot and
  • caramelize onions over medium to medium heat, reserve.
  • Deglaze with champagne, add bay leaf and black pepper- reduce
  • by half. Add heavy cream and reduce until thick and bubbly
  • (remove bay leaf). Remove from heat, fold in onions and cool.
  • Fold into mayonnaise and season with salt if necessary.
  • 2.) Gently mix Champagne Aioli with lobster meat and reserve.
  • Serve 1.25oz of Champagne Lobster Salad on 3 grilled brioche
  • sliders with lettuce and tomato per plate. (Chopped parsley or
  • tarragon are a nice addition to this salad if desired)
